There is nothing better than eating hot homemade bread and the smell of it baking in the oven! These days, my indulgence in consuming traditional baked bread is only on special occasions or date nights. Even then I may decide to forgo the bread for dessert. Living my life without bread is not an option. I have tried various recipes for low carb breads. The problem in my mind is many of them taste eggy, or the base of the bread is cheese. Don’t get me wrong some of the recipes I have tried have been good. Others have been epic fails! I want to smell that yeast smell when my bread is baking in the oven. Co I pulled from different recipes and came up with a viable solution for me. I’ve got to say – this almond flour bread is one of my favorite recipes! It is such an easy recipe and requires only a few ingredients.
I had to face the reality that low carb breads will never taste exactly like my homemade wheat or sourdough bread. You CAN taste the almond in almond flour bread. I think it has a pleasantly nutty and ever so slightly sweet flavor.
This recipe contains Psyllium Husks. Psyllium does not only help with the texture, but also makes your entirely grain free loaf and tastes a bit like whole-wheat bread. Additionally, psyllium is a fantastic source of fibre!
The difference between this keto bread recipe and the many others you can find online is this bread does not taste eggy!! Some keto bread recipes use as many as 7 eggs to help bind the dough. The result is a distinctive egg taste and weird spongy texture, which is a turn off. I use 4 eggs in this recipe. To prevent any eggy taste, I omitted 2 of the egg yolks, using only 2 egg yolks.
Because I wanted the yeast taste in the loaf and wanted an extra boost in the rise, I added yeast. Yeast is activated by sugar which is a no no on a Keto lifestyle, however I added a tsp of sugar to this recipe to be eaten up by the yeast.
And there’s one more secret ingredient that helps this bread have a texture that resembles regular bread: Xanthan Gum. Low carb bread lacks the gluten which occurs in wheat, which can make it crumbly. The xanthan gum gives grain free bread a stronger structure and a better crust.
This recipe is a good low card bread alternative. It makes a beautiful loaf, that satisfy’s my bread fix during the week if I want toast or a sandwich!
I used a small loaf pan 7 x 3.5 inch Low carb bread is filling and slices don’t need to be the same size as regular wheat bread. That’s why I purchased a small loaf pan like this for low carb baking. It’s half the size of a regular loaf pan.
It’s disappointing to take your bread out of the oven seeing that it’s tiny and hard as a rock. If you’re new to baking bread, there are a few simple rules to follow so this does not happen.
1.) Make sure your baking powder is fresh. Check the use-by date or test it by putting a little baking powder in a glass with warm or hot water (cold water does not work). If it fizzes, it’s fresh.
2.) Beat your eggs until they are frothy to get air into them. When you add the almond flour do not over-beat and the dough stays “airy”.
3.) Make sure your eggs are room temperature. If you use them straight from the fridge, the dough is colder, will take longer in the oven to heat up and this can affect the efficiency of the baking powder.
4.) For the same reason, use warm water and not cold water.
5.) Use extra fine Almond Flour. All almond flour is not created equal. We’ll talk about that in another post.
If you follow these suggestions, you should be good to go!
Keto Sandwich Bread

- 2 egg whites at room temperature
- 2 eggs white & yolk, at room temperature
- 2 cups Almond Flour
- 1/4 cup Grass Psyllium Husk Powder
- 1 1/2 tsp Baking Powder
- 1/2 tsp Xanthan Gum
- ¼ tsp Sea Salt
- 1 tsp active dry yeast
- 1 tsp granulated sugar
- 1/2 cup plus 2 Tbs warm water
- Step 1
- Preheat your oven to 350˚
- Step 2
- Dissolve yeast in warm water. Make sure the water is not too hot, it will kill the yeast. Set aside
- Step 3
- Sift dry ingredients together to get rid of the lumps in the flour.
- Step 4
- Beat the 2 eggs and the 2 additional egg whites.
- Step 5
- Add the rest of the ingredients and blend until you have a smooth dough. Don’t over-mix.
- Step 6
- Fill greased baking pan and cook for 45 minutes. Depending on the heat of your oven you may want to start checking your loaf at 30 minutes. If your loaf appears to be getting dark on the top and the center is not done cover with a sheet of foil to prevent burning.
